The Single Comb White Leghorn is the most common hen in the US egg industry. This hen creates the white eggs most common in supermarkets.
Brown eggs are produced by Rhode Island Red, New Hampshire and Plymouth Rock breeds. The average laying lifespan for a hen is around 18-20 months. The younger the bird, the higher quality the eggs.
The majority of chickens are raised on poultry farms. Free range and organic eggs account for 5-10% of the industry. Free range organic eggs tend to cost 2-3 times that of factory eggs, but the taste is worth it.
