About National Egg Salad Week
National Egg Salad Week is an unofficial holiday, with no sponsor that solves a huge problem in the Christian community…what to do with all those hard boiled eggs used in the egg hunts on Easter! If you like mayonnaise, this is a no brainer.
But if you absolutely detest mayo and it’s counterparts (like I do), this can be an issue. What to do? Sour Cream whipped with cream cheese and a little chicken stock makes a fabulous substitute for the emulsified fat, and if you use low calorie sour cream and fat free cream cheese (you won’t notice the fat missing), throw in some chives and red peppers, you’ve got a very tasty alternative to deviled eggs and egg salad.
Whether you take the traditional route for egg salad or my work-around, enjoying Egg Salad Week should be as easy as open mouth, insert food.
